I Wonder Wednesday…

I love food. Like, really, really love food. Give me shrimp, crab legs, yummy spicy chicken wings or a big fat rare steak and I will gladly take my time devouring and delighting in ever single bite. 

And I feel the same way when I’m craving a burger. And this rarely happens often and I also don’t do burgers in the house. It just seems like a lot of work (like making tacos). So when I want a burger, I. Want. A. BURGER!

There’s a yummy place we’ve found called Ola Lola’s with a fun lil atmosphere. Their burgers are a great size and very very flavorful. It’s a nice way to spend an early evening. 

Which brings me to the ‘great size’ bit…I wonder when a HUGE burger became the norm or even something sought after. I wonder when having to cut the burger with a fork and knife became something to shoot for. I mean, to each their own but that doesn’t  denote a superb burger to me. It’s just show. 

Grant it we did have a fabulous burger at Blue Fin a few months back but it seems as if their burgers have gotten bigger. Much. Much bigger. And $$. 

So I wonder what you think: an appropriate sized, fully flavored, perfectly cooked  burger or a beast of beef? Here are a few I came across the other day. Bon appetit!

   
 

Baby bites and a road to Tuscany

hello. My name is Jennefer and I’m addicted to the food network. And the cooking channel. And cookbooks. Lots of cookbooks. And really big, complicated, intricate, long cooking meals (hello, Julia Child). While this addiction results in some really, REALLY good food, I do get overwhelmed with ‘what’s for dinner?’  

In an attempt to organize and declutter my kitchen world, I’ve gone back to meal planning and the weekends are normally when I try to get lots of cooking done and my week in line (this is also when I do bulk batches of things like the husbands burritos that I freeze). My wonderful husband takes on baby Gabi (wait- can I still call her ‘baby’ now that she’s a year old??) so I have hours of cooking time. Yes, I get excited! I also get a chance to strap on my rain boots and work on the garden as well. Thank you husband!

So this past weekend I went to town. We had Gabi’s one year appt and she’s a little under weight so I’ve been looking into recipes to help bulk her up. I whipped up these  Tuna and sweet potato bites, which Gabi loved loved loved. Score! And to help give her more veggies, and use up the leftover sweet potato, I made these Zucchini bites. I didn’t add the onion, though, and I added some fresh thyme to this and thyme and dill to the tuna bites. Yum-o! Sorry- no pics. 😦

But the piece de résistance of the weekend had to be the porchetta I roasted on Sunday. As the opening of this post states, I love cooking shows and I recently have become obsessed with a fan of the show _Extra Virgin_ on the cooking channel. Their food always looks amazing and everything is so fresh and local. Check it out! It follows the couple from their homes in Brooklyn, LA, and beautiful Tuscany. I think I just live vicariously through them! 

The other day Gabriele made this Porchetta Sandwich and I knew I had to try it. I used an 8 pound picnic roast that is used for a classic pernil dish so I actually had to cut the bone out. This was a first and I think I did a pretty good at not mangling the meat too much! Although rolling it back up took a little creativity on how I tied it.

The house smelled AMAZING for the 5 hours that it roasted, low and slow. I also detached the thick fat cap, roasted it separately, and made a little chicharrón for my dad. He was in heaven.

The sandwiches turned out great and it was a perfect dinner to end the weekend (with lots of leftovers for carnitas, burritos, and perhaps some posole??). Total win!

PS- did I mention that I just HAD to buy their cookbook?? Sssshhhh…don’t tell the husband. But I bought it for my Kindle, which he’s been bugging me to start using, so that’s perfectly acceptable, right? At least that’s my story and I’m sticking to it! 😉

Thursday beach day!

we try to get out to the beach at least once a week and then again on the weekend with husband. Unfortunately the weekends haven’t quite worked out: it’s the summer so kids are off school and the beaches fill up fast. We’re the kinda the less the merrier kinda folk so we normally go early and head out before the crowds swell the beach. 

We’ve been out of our routine the last month or so this is the first Thursday that we headed to ‘our’ beach: playa sardinera. It’s about 10 mins from our house abd there’s a little protected pool that we take Gabi into. Normally it’s pretty secluded but it’s filling up pretty quickly (I’m writing this beachside while la nena takes a snooze. The beach certainly wears out a chica)!

We’ve got a pretty good location under two Palm trees that give a lot a shade but there’s still a spot of sunshine to layout and get some sun. Weekdays normally consist of my dad, la nena, and myself along with lots of gear: blankets, towels, portable playpen, toys, and libations.

And we’ve since added to our list. If you saw my previous post, we were trying out our camping grill at the house the other day because my father got the grand idea of grilling on the beach. So the idea of having ‘pinchos’ was born. 

Pinchos are the Puerto Rican version of kebobs. They’re sold on the sides of the road around town and at little guaguitas (food carts/trucks) around the more popular beaches. Grilling? Beachside? I’m all in!

Living in Dothan, alabama for about 3 years, my husband and I made lots of trips to the Forgotten Coast in Florida but we’d normally only pack easy snacks and fresh made sandwiches. Now when we would primitive camp with Linger Longer I got more daring with our fare since we were pretty much on our own food wise.

Today will be the first time trying out the grill, beachside, with 20mph gusts of wind. Good thing it’s propane so we don’t have to worry about any charcoal bits floating around causing problems. I’m doing pinchos de pollo (chicken) and I adapted this Recipe. I just focused on the marinade and also added fresh oregano from the garden.

All in all it turned out pretty yummy. Gabriela even enjoyed a few pieces. I need to make a few tweaks and also have to figure out how to contend the wind but it was a great first excursion. Can’t wait till next week!

Schedules 

Yea, I’m not so much a scheduler. Which is funny because I taught college courses for about three years while I was a grad student and I also was a tenth grade teacher of English and History. I have quite the storied life. And while these professions would, you’d think, lend themselves to being structured and scheduled, I must admit my best work was by my seat of my pants. 

That went pretty much for my academic career (and professional as I also was a food reviewer for a local magazine where I lived before moving to PR). If I wasn’t right up to deadline I really wasn’t invested in the product I was putting out. I’d say this had good and bad qualities with it. I mean even to this day, it’s 9.05 pm and I’m just now getting around to blogging. Granted I’m dealing with sleep training that is failing and a baby that refused to nap today until 2 in the afternoon, but it’s still last minute. 

Which brings me to scheduling and that beautiful baby who won’t sleep. 

From the beginning I read books. Lots of books. Swaddling vs non swaddling. Paci vs no paci. Feeding on demand vs scheduled feedings. Attachment parenting vs ?? Can’t think of it. Co sleeping vs independent sleeping. And my head just exploded. 

This is my first so of course I was scared s$&@less but thankfully being older (and I’d like to think wiser- ha!) I decided to just go with the flow. And it worked out great. Gabriela was (IS) a happy, engaged, pleasant, easy going baby. We could drive all around town (or Puerto Rico) and she’d just enjoy the ride. Living in Puerto Rico everyone wants to say hello and chat a bit and having a baby in tow added to that desire to converse and Gabi complied with coos and smiles, which just enchanted the locals. We loved/love it. 

And her daytime naps? Awesome! If she was being held. Yes. We were those people. And we still are. And this week I have started ‘sleep training’ her – the gentle, no cry version- and it’s driving me bonkers. Plus I’m sure it’s not helping that her first molar is STILL creeping in. Devil teeth. 

In doing this ‘training’ I’ve realized that we don’t really have a schedule. I could get very detailed about what ours days look like but that’ll be boring. Needless to say, everyday consisted of baby girl being held for her naps (which, just for the record, I absolutely LOVE it!). But productivity was low. Schedules and boundaries were needed. Hence the training started this week. 

But things still don’t go according to plan. Like today. Sunshine was up at 6.30 and didn’t take her (held) nap until 2.00pm today. (I must note, however, that she did snooze a bit BY HERSELF. In her crib!) Which then led to a late dip in her pool, then a bath, and a feeding, which made everything way behind schedule.

Everything worked out how it should. I just have it in my head that certain things have to happen at certain times. And while that is true, I’m slowly beginning to realize that that’s not how I now live my life. So Gabi’s nap was late; her feeding was late; her bedtime was late. But she got to swim, and see moo cows, and I got to spend one on one time splashing around with my girl. 
There’s a time and place for schedules. And there’s a time and place for letting  life unfold as it should. I’m looking to find that happy medium. 

The downside today though: no real dinner. Instead, a Bagel with cream cheese. But still yum!

Here we go!

a few months ago I came across this SAHD’s blog while researching warm weather  types of baby carriers. I live in Puerto Rico. It’s bloody hot here. Anyway, this dad gave a review of the ergo ventus that I was eyeing.

I was actually drawn into his blog and began reading older posts and quickly began liking what I was seeing. And not to mention his daughter is a doll! Aside from him being uber athletic and a great runner , who ENJOYS running – sigh- he was very relatable. 

I think what intrigued me most about him was that he blogged everyday. Every. Day. Who does that? What parent has the time? I even have help with my ONE and the last thing I think about is blogging. My to-do list just keeps getting longer and longer of things I THINK I need to do. 

So in thinking about this, I’ve decided that I’m going to do the same. Going-dad has certainly inspired me to not only blog more and enjoy those fleeting moments but to maybe also embrace running. So. Hard. 

So here’s the deal, I’m going to attempt to blog daily (though only having a hotspot on my phone and no wifi in the house, internet access gets tricky). But that’s just another excuse. This was supposed to be an exploration of the world around me, my thoughts and experiences, and my passion for food to intertwine with everything. That part has been lacking. 

So stay tuned for musings overload as I invest back into cooking! Added bonus: gabriela is getting to be such a little lover of food (I’ve been making her food since we started solids— FUN)!

Transitions

It’s amazing what your expectations may be of something and then when you actual experience it, it’s completely different. But that can be a good thing too: it’s nice to have expectations but I’m finding it more beneficial (and saner) to go into things with a more open mind.

Life on the island is interesting, to say the least. Things just move differently here, and I’m just not talking about the weather. For example, we inherited the previous owners ‘stray’ dog. There’s not a real ‘pound’ here so rather than adding to the stray dog problem we called city hall to have the dog removed. For $40. That we had to pay. This was over 3 weeks. The dog is still here. We’ve called multiple times and this dog guy has got to have the best job in the world because he checks in at 8 and no one knows where he is until 4 that day. One week he was sick. And the last two weeks his van has been in the shop. 2 weeks.

Internet. Don’t even get me started. I’m writing this on my iphone because we’ve lost our wifi. Again. Internet will be back soon. Albeit at on 2MB’s because of our remote location. Nice.

But we knew there would be challenges. And thankfully the great things of PR have definitely outweighed the bad.

Which brings me back to cooking. Isn’t that interesting that everything leads back to food? Or maybe that’s just me.

So food. I had these expectations of fresh fruit, produce, lovely meats, and an abundance of fresh herbs because c’mon! I live on an island where the weather is super duper ideal for growing things! Yea- I was wrong. But that’s ok– keeping an open mind and fishing out different grocery stores I’ve been able to find some really great deals and better looking produce. Plus- I’ve got my guy in the way to James’ work who still has the best looking tomatoes on the island.

So last week I was able to churn out Ellie Krieger’s stuffed peppers . Yum. And of course, it’s loaded with cheese. Being lactose intolerant whenever I do anything with cheese I go all out. If I gotta take pills I gotta make it worth it.

We also received a huge avocado from our fabulous neighbor, Don Carlos. These things are bigger than my head and they taste so much different than the ones on the mainland. It still amazes me how fresh and amazing something tastes when it’s just picked from a tree, vine, or plant.

Rounding out the weekend I made Tyler Florence’s Ultimate Ribs. These never disappoint.

So even though things may not go as we had planned or our expectations fall short, in the brand scheme of things (like my sister Natalie said to me the other day) it’s probably not that big if deal. And in the end, there’s always a meal that can bring you comfort.

a week gone by…

So it’s been a week since we did the big move to Puerto Rico from our little town of Dothan, Alabama. I thought it was a culture shock going from Phoenix/St. Louis to Dothan but WOW! I think this one takes the cake!

It took us about a day or two to rest up from our marathon flight into Aguadilla and then it was time to head out and explore! Well, at least explore on a small scale. I’ll be compiling a list of all the restaurants/food trucks that we hit here so stay tuned for that. So far the food has been pretty darn good and authentic. Even the chinese and pizza we had a PR flair to it. We did happen to find a Lechonera close by and and it was everything we were expecting it to be: juicy and flavorful. There is a town southeast of us that have lechonerias from one end of town to the other…needless to say, this is on our list of must visits!

We also checked out two of the popular beaches here on the west side: Crash Boat and Jobos Beach. All I gotta say is BEAUTIFUL! We’ll of course be frequent-ing these establishments often just as soon as Gabi gets a little bigger but I do see mini trips in our very near future.

The game plan was to take a few weeks and explore the island while we waited for our household belongings and car to be shipped. This way we didn’t have much to worry about while we shacked up on the Coast Guard Base. Have I ever mentioned how things never really go according to plan when it comes to our plans? We got the call on Monday that our container has made it’s arrival to San Juan and that it could be delivered within the next day. This was a week plus 1 day since it shipped; we were told it could take AT LEAST 3-4 weeks. Thankfully we had our fabulous house secured so the container arriving early was no big deal– just not expected. So the off-load happened on Wednesday and we will be moving into the house on Monday! We didn’t get the exploring we had wanted but at least we have our things and we can start putting our home together!

So that’s where we are at right now. Stay tuned!

New adventures!

So I started writing a ‘catch up’ post the other day explaining my absence from my blog, but of course, I got sidetracked and never got around to finishing it. So here’s a quick sum up of the last month and few weeks:

– we had our baby! July 10 at 6.36p little Gabriela Esperanza arrived healthy and happy! She weighed 6lbs10oz and was 21in long. Perhaps I’m biased, but she’s a cutie!

– my husband wasn’t able to make the actual birth due to his training in Georgia so my father was with me the whole time: from admission into the hospital to taking the very first pic of Gabi. I can’t ever thank him enough for doing that and being the best birth coach ever!

– my husband graduated on the 15th, came home that night, and we proceeded to pack up our house in preparation for our move! (For those new to my little blog, we are relocating to Puerto Rico due to my husband getting a new job. How cool is that!?!)

So the last 5 weeks have been a whirlwind, to say the least! The house has been packed and our container is currently en route to the port and then onto a ship, to hopefully arrive in San Juan in 2-3 weeks! Fingers crossed.

With the house gone, literally, today we start our looooong journey to Puerto Rico. We are currently in a very overpacked VW Jetta wagon consisting of 3 adults, a newborn, 5 pieces of luggage, a stroller, car seat, and a guitar, heading to Jacksonville to drop our car at the port. It’s the darndest thing watching all of your belongings AND car be shipped off into the unknown and hope that it somehow makes it’s way back to you in another location. Talk about letting go!

The car ships today and then we fly off tomorrow night for Aguadilla! And that little experience is going to be filled with angst as it’s the first time I’ve ever gone through airport security with a newborn, fly with a newborn, and go to Puerto Rico for the first time. Out flight is at 6pm, which first goes to New York (who’s brilliant plan was that) and then we arrive in PR at 3 in the morning. Again, another brilliant planner put that one together. Please be saying a little prayer for this mama!

i must say though that I am very lucky for a few things that will most definitely help with my anxiety level: my husband who goes out of his way to make sure I don’t freak out or have an utter meltdown and who is always so kind to me when I do in fact freak out and have an utter meltdown; my father who epitomizes the whole laissez-faire mentality and keeps calm and collected; and my daughter who certainly has the Vizuete gene of being a fabulous napper; and Puerto Rico. What more is there to say?
