Hump Day, Shades Day

Do I have your attention now?

It’s Hump day/Food Porn50 Shades of Chicken” day. Tonight I am making the “Chicken Sub”. Seems innocuos enough, right? Well it is actually pretty straight forward: marinate chicken cutlets (I’m using butterflied chicken thighs), then make a modified caprese salad on a fabulous baguette (or pan de agua in our Puerto Rican case). But to read the description in not only the intro but also in the actual directions, you may in fact blush. For example: : When the chicken can no longer stand the antici[ation, heat the remaining 3 tbls. …” or “…marinate at room temperature…or even better, overnight until it begs of you.”. Yea– this is a cookbook.

And if you really think about – or at least this is how I think- cooking should be fun, adventurous, gasp- even arousing! Or at least that’s what I think about cooking. Ok– maybe not the arousing part but some Julia dishes were oh so good. I don’t know– it always baffled me hearing how people would say that cooking is “hard”, or “complicated” or that everything they tried tasted “awful”. I didn’t grow up with a savvy chef of a mom: eggs mixed with canned tuna fish was absolutely yummy when I was young (and even now) and Hamburger helper was a staple in our cupboard. But over the course of my formative years, I was lucky enough to work at the Ritz-Carlton and Old Warson Country Club, which exemplified top-notch cooking; and I got spoiled.

So I made food a priority. I Enjoy food. I RELISH food. I sometimes can’t wait to try out that new dish or head to a new restaurant to try out FOOD. For me, it’s relaxing. The repetitive cutting and chopping was comforting to me. I looked forward to dinner time so I could, without question, spend hours in the kitchen. To get away from the hustle and bustle of everyday? No. I just fell in love with cooking.

So trying to pick that back up here in Puerto Rico has been quite trying.Reading a recipe, making a list, and expecting to find said ingredients at the store is a given; stateside. Here on the island– you’re lucky to find half of your ingredients. I’m not complaining. I’m just not used to this shortcoming. But this is giving me all sorts of challenges to overcome. This is when cooking gets fun!

So tonight was a chicken sandwich. Yum. Tomorrow it’s a Giada pasta dish with some special puerto rican sausage. It’s all about adapting, right? UPDATE: will be doing Ellie Krieger’s…with a little modification.

Nothing will ever go as it is planned. I learned that the day we decided to move to PR; the day we took our lil 5 week old baby Gabriela on a 10 hour travel plan and moving into a new house. You gotta go with the flow. And in cooking and in life, I think things will turn out pretty good!

Family, friends, food, and (f)beach

Last week was a crazy and fun week. My best friend, Amee, (who I’ve known since the 6th grade) and my cousin, Nancy, and her son, tony, came for a visit. It was all rather coincidental that they came to visit in the same week, which made it a bit overwhelming but an absolute blast!

Cooking for a crowd can be daunting but I’ve hit an old standby that I just love making: arroz con pollo (chicken with rice). There’s nothing fancy to this dish but it’s very hearty and feeds a group of 3 men and two ladies. And it’s also comforting: I remember my mother making it and so it always brings back memories of her.

So the whole group was together Tuesday so we headed to El Platanal for dinner. Yum! The food was simply prepared so the natural flavors of the beef, seafood, and plantains (of course we had to get some mofungo) shined. Aside from the great food it was just nice to have everyone together at the dinner table. Did I mention the mojitos were amazing!!

So we spent a few days galavanting around checking out the beaches. We started out at playa Sardinia, headed over to crash boat, and finished off with one surfing at Jobos Beach. We haven’t been here long but we’ve seen the beaches on various occasions and it still awes me how incredibly beautiful it is. The different colors of the water; the various swells and crashes of the waves; and the scenery that surrounds the water. Our guests also enjoyed the simple splendor of it all.

The week was called off by some homemade pernil. I love love love making this recipe, a variation of this Sunny Anderson recipe. Because we were going to be gone for the day beachside, I decided to start off the pork in the slow cooker abs then finish it off in the oven. I could have just left it in the slow cooker and be done with it, but you HAVE to have the crispy skin, or chicharron, to go along with it. So off into the oven it went for about another hour and so and the skin came out golden and crispy. Such an easy dish that yields not only a huge amount of food but also is oh so good! I paired the pernil with arroz con habichuelas, and tostones. Everyone gobbled it up.

The house is quiet now. The extra beds are out away and everything has been cleaned up and I smile because it truly was great having my people come for a visit. It’s one thing for a friend to say, yea- I’ll come visit but when they actually do, it truly is a testament to the friendship and I couldn’t be more touched that Amee, Nancy, and Tony took time from their uber busy schedules to come see our new life and to also meet baby Gabriela. It really made me realize how precious my friendships are. So go call up that friend that you’ve been meaning to, share a hug, or it back and remember fond memories that you may have. You’ll see how it can revitalize your soul!

Oh baby, baby.

So I’m sitting here in the dark. One arm cradling Gabriela. Trying not to make any sudden movements because she’s got a bad case of the ‘babies’ today! I brag and brag about how wonderful she is: sleeping through our 12 hr flight from Jacksonville to Puerto Rico; our multiple trips between housing and our house; and dealing with these warm ass Puerto Rican days.

Well today, she just wanted to remind us that indeed she is a baby and we’ve had it easy. And it really began three days ago when she hadn’t pooped all day. Did you know that exclusively breast fed babies, aka EBF (there’s even a Facebook group) can go up to 14 days without pooping!?!? Now that just doesn’t seem right. But gabi didn’t go until today: 3 days!

So maybe she was just ticked off that she didn’t have her normal 4+ poops a day and she just wanted to make it known. Or maybe she’s just being a baby.

All I know is: my father is working on arranging furniture, my husband is out fetching dinner (no easy feat just yet), and I’m sitting in the dark with my darling little one. Inconvenient. Sure. Frustrating. Perhaps. But I figure there could be worse things. As long as she’s happy and comfy, I’m happy and comfy.

Let’s hope for a better day tomorrow!!

a week gone by…

So it’s been a week since we did the big move to Puerto Rico from our little town of Dothan, Alabama. I thought it was a culture shock going from Phoenix/St. Louis to Dothan but WOW! I think this one takes the cake!

It took us about a day or two to rest up from our marathon flight into Aguadilla and then it was time to head out and explore! Well, at least explore on a small scale. I’ll be compiling a list of all the restaurants/food trucks that we hit here so stay tuned for that. So far the food has been pretty darn good and authentic. Even the chinese and pizza we had a PR flair to it. We did happen to find a Lechonera close by and and it was everything we were expecting it to be: juicy and flavorful. There is a town southeast of us that have lechonerias from one end of town to the other…needless to say, this is on our list of must visits!

We also checked out two of the popular beaches here on the west side: Crash Boat and Jobos Beach. All I gotta say is BEAUTIFUL! We’ll of course be frequent-ing these establishments often just as soon as Gabi gets a little bigger but I do see mini trips in our very near future.

The game plan was to take a few weeks and explore the island while we waited for our household belongings and car to be shipped. This way we didn’t have much to worry about while we shacked up on the Coast Guard Base. Have I ever mentioned how things never really go according to plan when it comes to our plans? We got the call on Monday that our container has made it’s arrival to San Juan and that it could be delivered within the next day. This was a week plus 1 day since it shipped; we were told it could take AT LEAST 3-4 weeks. Thankfully we had our fabulous house secured so the container arriving early was no big deal– just not expected. So the off-load happened on Wednesday and we will be moving into the house on Monday! We didn’t get the exploring we had wanted but at least we have our things and we can start putting our home together!

So that’s where we are at right now. Stay tuned!

Oh insomnia…

Preggo girl problem #2,453– insomnia, brought on by having to pee 4 times at night. Which then led to preggo girl problem #2,454: rearranged the furniture in my bedroom to accommodate PJ’s pack n play and rocker (PJ will be sleeping in my room until the move to PR) and then forgetting I moved the bed on first said potty trip from above and almost running into the wall in my half-asleep stupor. Yea, been a pretty interesting morning and it’s not even 5am yet.

Upside to being awake at the pre-crack of dawn (if there is one) is that I can get in a little chat with my husband who is on Georgia time and who actually enjoys waking up before the sun. Please let this child of mine have more vizuete genes when it comes to sleeping!

So of course in my pre-dawn awakeness (is that a word??) I’ve noticed I’m yet again delinquent in posting. Food has been prepared, photos have been taken, and thoughts on commentary have rolled around in my brain, they just haven’t quite made it here. Yet. Perhaps I’ll do a huge montage of all that’s happening and catch you all up on the lazy craziness of the past week or so.

I’ll tackle that one once the sun has made an appearance! 😉

32 Weeks– WOW!

How far along: 32 weeks
Gender: still clueless but lately I’ve been flip-flopping between a girl and a boy!
Weight gain: 18 pounds. Actually LOST a pound since my last appointment 3 weeks ago. Really wasn’t trying to but I think between being more mindful of what we are eating and getting back to zumba I finally leveled out.
Maternity clothes: 100% maternity clothes that are uber comfy!
Stretch marks: Still a NO!
Belly button in or out: Innie. But it really is starting to flatten out.
Sleep: Sleep is still a struggle but at least I am lucky that I can nap during the day.
Best moment this week: My husband James was able to come home for the weekend. He hasn’t seen PJ and the belly in 9 weeks. Was very nice to have him home, even if it was just for a few days.
Miss anything: being able to slip my socks on without having to maneuver around the belly.
Movement: still rocking and rolling in there! Still fascinates me!
Cravings: I have about 10 different cravings a day. Trick is narrowing it down to what I’m REALLY craving, which varies from day to day.
Queasy or sick: Heartburn still but getting used to it. Ugh.
Looking forward to: some very much needed pool time…in our baby pool. 🙂

And 3 (hour) is a charm…

Hello everyone! I know it has been forever since I’ve updated the blog and I can blame it on life, being busy with the job, or any number of things but it all boils down to sheer exhaustion and no motivation. Plain and simple.
And this would be pretty much ok with me but there’s a reason why I’ve been laying low when in fact I should be documenting all that I can: I’m pregnant! Yep! The husband and I are expecting our first child in July! I think my previous fertility-challenged rant I posted way back when may have had something to do with it (or maybe the next step in our fertility treatments were going to be daily shots and my body decided ‘oh no! Let’s hurry it up and get pregnant!!’) So there you have it: as any soon-to-be-mom knows, this whole growing a baby thing is exhausting!

I am 26 weeks tomorrow and I find myself sitting in a Labcorp in Avondale, Arizona undergoing my 3-hr glucose test. Seems I failed my 1-hr test – WHAT!?! – so I now have to do the 3 hour. And while I am not a great fan of needles (I am having to have my blood drawn 4 times every hour) I think the worst part of this morning is that I am STARVING! I seriously think I dreamt of food all night knowing I wouldn’t be able to eat a thing until this test was done. Needless to say, it’s now 11.08, my last draw is at 11.50 and I’m having my father meet me at the clinic with chick-fil-a in hand. And I just had a hunger growl rumble from tummy.

So just sitting here I figure what better way to pass the time than to update my very outdated blog!

While you might think being preggo is probably the biggest news I’d have to share, alas- it is not! If you picked up on it, I’m in Arizona at the moment (and not my little hometown of Dothan, Alabama). Some other news we received a few months ago was that my amazing husband was offered a pilots position with Customs and Border Protection in…wait for it…PUERTO RICO! Oh yea babe! So between finding out we’re expecting we’ve also been trying to figure out how and when we’d be relocating. And the other awesome part of everything happening is that my father will be moving to PR with us!! So right now I’m jn Phoenix helping get his house in order, packed up, and sold!

So this is just a brief look at what is happening at the Kaffenberger/Vizuete abode. I will be updating the site on an almost daily basis (as my husband is away at FLETC, agent training, in Georgia for the next 3 months) so he’ll be able to see what I’ll be up to during this time of transition as well as seeing our little sprout grow with weekly belly shots and also sharing this amazing time with you wonderful people!

20 lbs of what!??!

So I am notorious for purchasing lots of pounds of things from our local farmer’s market. Last summer is when it all started. My husband met a guy at work who knew where to get really cheap corn. I was thinking a few ears or kernals already shucked— in other words I had no idea what we were getting in to. We crossed over into Georgia and pulled up to a huge farm that sat on hundreds of acres of land. Come to find out this particular “farm” supplied corn to a good many supermarkets in the neighboring states. We ended up buying a bushel of corn, not really knowing what a bushel looks like. It ended up being about 75-80 ears of corn. Fresh, sweet. buttery, corn! This was my initial introduction to cooking on a grand scale in order to wittle down the corn! I sorta felt like Bubba in _Forest Gump_: I made corn chowder, corn fritters, corn with other veggies, cornbread, etc etc. It was pretty freakin awesome!

And that is how my obsession with large quantities of produce began. This summer began with 20 lbs of tomatoes. TWICE. Then on to Blueberries. We actually went to the farm and picked our own and boy were those good! Then came the strawberries, figs, and peaches. And I was thinking that maybe that would do it for the year. But nnnooooo…satsumas came into season. 2 weeks ago I bought 20 pounds and yesterday I bought 10 more pounds AND about 15 Meyer lemons. Yep. Obsessed.

I bet you’re wondering what I do with this plethora of fruit? I became a jam maker. And tomato sauce maker. And roasted tomatoes confit maker. And just roasted tomatoes (because I couldn’t figure out what to do with the last few pounds. Which make for an excellent pizza topping!) So that’s what I did. Some of the jams came out fantastic: great texture and most definitely tasted great! Others came out runny, but still pretty yummy. I’m looking over at my “pantry” (which is just a huge wire shelving unit) and I think I’ve got about 40+ jars of different jams. I just smiled.

The crazy thing about all of this (other than buying in 20 lb increments) is that I thoroughly enjoy the whole canning process. I can sit in the kitchen all afternoon stirring, mixing, peeling, slicing, boiling jars, etc and I am at utter peace. Grant it my back is usually a bit mad at me, but as far as my peace of mind, it is relaxing! It’s the same way when I do a Julia recipe: as complex and lengthy as some of her recipes are, I relish the time it takes to prepare each item. And I ALWAYS look forward to making Thanksgiving dinner. From scratch. All of it. We’ll be in St. Louis this year for Thanksgiving so I’m thinking of doing a post-thanksgiving dinner once we get back. Thanksgiving dinner is my ‘piece de resistance’ of the year. And I LOVE IT!

Crab legs and steamed clams for dinner tonight and flank steak marinated in a mojo sauce made with some of those yummy satsuma’s and meyer lemons…YUM!

Halloween Party!

So I’m really not one of those folks who gets uber excited about Halloween and what sort of costume I can make/sew/conjure/create…I’m just not 1. that crafty or 2. really that interested. All you folks out there who can create amazing costumes and totally bring Halloween to life, I tip my hat to you.

It was sheer anxiety the last month or so in the Vizuete/Kaffenberger household becasue the magazine I work for was holding its 2nd annual halloween/Patron Party and I had to go. The horror of it all, let me tell you. So after multiple days of staring at the laptop looking for “couple’s costumes”, I was just about to throw in the towel when I decided to take a little break. One morning, at about 4.15 (my husband works way too early every other week and I somehow manage to wake myself up at the same time as him) as I was staring at my ceiling wide awake, it came to me: Julia Child!!

Yes my friends, I went as Julia Child. I thought I pulled it off pretty well (well, other than being hispanic and really brown because of our beach weekend and I’m only 5ft 6…and a half) but alas, I did not gauge my audience and a lot of people kept looking at me like I was the one catering the party.

Oh well. It was fun creating the costume and especially a great memory as both my husband and father helped me put it all together.

Here’s to better luck next year. Maybe…

Where has the time gone?

Wow– It seems like FOREVER since I last blogged. Bad, bad, jen! In my defense, my father has been visiting us from Phoenix, Arizona (Avondale actually) and all my spare time has been spent with him. Sorry gang! He came to town because I conned invited him to do this awesome half marathon with my husband and me in Apalachicola, Florida. And yes, that is how i phrased the conversation to him months ago– an AWESOME half marathon! But in all seriousness: can a half marathon really be “awesome? 13.1 miles of running. Just running. And over a bridge. Twice. With views of the beautiful Apalachicola Bay, just harkening you to kick off your running shoes and take your tired body into the blue sparkling water…Or at least that’s what was running through my delirious mind when we hit mile 10-ish.

All in all it was a pretty good run…being I only really trained for about 4.2 miles. BUT I ended up running about 6.5 almost 7 miles so that was HUGE for me. The other 6+ miles weren’t pretty but I’m so thankful for my dad and James for keeping the atmosphere light and helping me through it. Yes gang– I am not a runner but I so do look the part! HAHA! I do think  I am more cut out for 5 and 10k’s!

My father has been doing some “cooking” of his own by raiding my pepper garden. Of all the veggies I planted in the spring, my habanero, bell, and banana pepper plants are just thriving! So he decided to make LOTS of aji, which is a south American-style pico de gallo. YUM! OH– and he has also raided my lime tree, which bears an orange colored fruit that tastes like a Mandarin crossed with a lime.

Along with brutal half marathons and spicy as heck aji, we’ve also gone to the beach every weekend. It really is a treat living so close to the Gulf! And we always make it a point to make sure we are able to take my dad a few times when he’s here. And this past weekend was picture-perfect!

So that’s pretty much what’s been going on with me. Unfortunately no Julia cooking has happened the last few weeks but I am channeling Julia heavily this week and I am planning on doing her stuffed leg of Lamb on Thursday. So stay tuned.
